Large Group: Penne Arrabiata and Chicken

This easy to make pasta dish took less than a half an hour and served 5 with tons of left overs.

Penne Arrabiata and Chicken

Ingredients

2 box penne pasta

1 large jar tomato sauce

2 filets boneless, skinless chicken breast

Fresh basil, rinsed, chopped

2 tbs. olive oil

1 clove of garlic

1 cup of shredded mozzarella

1 cup sliced fresh cherry tomatoes

Red pepper flakes

Salt and pepper

Directions

1. In a large pot, bring lightly salted water to a boil and in a skillet, warm up 2 tbs. of olive oil.

2. Once water is boiling, add pasta to pot and cook for 5 minutes or until al dente, and drain the pasta.

3. Cut the chicken breast into cubes and cook it through, seasoning with salt and pepper to taste – once done, remove to paper towels.

4. Warm up tomato sauce, adding basil, tomatoes, red pepper, salt, and pepper to taste. Once simmering, add the chicken, mozzarella, and sauce to the pot of pasta.
